Mother's Day

We would like to wish a very Happy Mother's Day to all moms out there. Although we should appreciate our parents every day, it's always nice to go the extra mile for at least one day of the year.

We are also very aware that this time of year can be difficult for many and we are consciously thinking of those who may find this particular holiday challenging. No matter how you spend the day, or who you choose to spend it with, we hope you spend it with love in mind.

Peanut Butter Cookies

Ingredients:

  • 2 1/2 cups (318g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 1 stick (113g) unsalted butter
  • 3/4 cup (202g) smooth peanut butter
  • 1/2 cup (100g) granulated sugar
  • 1 cup (200g) packed dark brown sugar
  • 2 large eggs + 1 egg yolk at room temperature
  • 2 teaspoons vanilla
  • 2 cups (340g) semi-sweet chocolate chips

Optional Extras:

  • Add a handful of your favourite nuts for an extra bite to your cookie
  • Use your preferred chocolate or a combination of different kinds of chocolate chips to add depth of flavour

 

 

Method:

    1. Preheat oven to 350°F/175°C. Line baking trays with parchment paper.
    2. In a medium bowl, whisk together the flour, baking soda, baking powder and salt.
    3. In a large heat safe bowl, microwave the butter until melted. Stir the peanut butter into the hot butter until well combined. Add the eggs and yolk, one at a time, ensuring everything is well combined. Add in the vanilla. Gradually stir in the flour mixture, followed by the chocolate chips, reserving just a few to decorate afterwards.
    4. Divide the dough into 3-tablespoon sized balls and place onto prepared baking sheets. Flatten the dough slightly into disc shapes to aid thorough cooking. Finally, dot each cookie with a few of your reserved chocolate chips to decorate.
    5. Bake for 12 minutes, or until golden brown. Allow to cool on the tray for 5 minutes before removing to wire racks to cool completely. (This may also be a good time to test your baking skills, while the chocolate is still molten - don't worry, we won't tell).
